Ken’s Simple Thai Peanut Sauce Recipe

Ken and I have been friends for over twenty years. He’s a talented musician and long-time systems administrator who happens to be a good cook too. He sent me this Thai peanut sauce recipe a while back and I’ve been making it ever since.

This simple, versatile sauce works on noodles, salads, rice, and as a dipping sauce for spring rolls. The balance of peanut butter, lime, and chili garlic sauce is savory, tangy, and provides just enough heat.

Ingredients

  • ½ cup peanut butter
  • 1 tbsp tamari
  • 1 tbsp sugar
  • 1 tsp chili garlic sauce
  • 2 tbsp lime juice
  • ¼ cup water

Directions

  1. In a bowl, whisk peanut butter, tamari, sugar, chili sauce, and lime juice together.
  2. Add water a small amount at a time until the sauce is thick but pourable.
  3. Adjust lime, sugar, and chili sauce to taste.
  4. If the sauce becomes too thin, add peanut butter. If too thick, add water.
