Sally Reed’s Best Pancake Recipe

My mother gave me this simple recipe for from-scratch pancakes that’s the best I’ve had. I have no doubt that she found it in an old cookbook decades ago.  It’s best served with butter and maple syrup.

1.25 flour
2.5 teaspoons baking powder
2 tablespoons sugar
.75 teaspoon salt
1 egg
1.25 cups milk (1 cup for thick pancakes)
3 tablespoons butter

Mix dry ingredients
Mix wet ingredients
Melt butter and mix in with wet ingredients

Add wet to dry and mix

Cook on hot griddle.
