Simple Crepe Recipe

Crepes are very simple to make as this recipe shows. The most time consuming step is to wait 30 minutes as the batter sets. Although this recipe isn’t vegan since it contains an egg, I prefer the results with non-dairy milk. I’ve tried this simple crepe recipe with both almond and coconut milk as non-dairy substitutes and, while either will work great, I preferred the crepe batter made with coconut milk.

Ingredients

  • 1 cup flour
  • 1/8 tsp salt
  • 1 egg
  • 1.25 cup coconut or almond milk
  • 2 tbl melted vegan butter
  • 2 tbl vegetable oil

Recipe

  1. In a mixing bowl, wisk the flour and salt to combine
  2. Crack the egg in the middle of the bowl and use a spoon to combine into a very dry mix.
  3. Wisk in the coconut or almond milk and melted vegan butter.
  4. Continue to wisk until the mixture is smooth.
  5. Let the mixture set for 30 minutes.
  6. Heat frying pan, add 2 tbs oil, and coat.
  7. With the pan off the heat, pour ⅓ cup in the center and tip the pan in a circular motion to produce a 8″ round crepe.
  8. Heat for 1 minute.
  9. Flip and heat for 30 seconds.
  10. Add your favorite fruit fillings and wrap, or serve in a short stack with maple syrup.

I prefer a short stack of crepes with plant butter and maple syrup with a side of whatever fruit is in season. For a fully vegan option, I’ll try an eggless version of this simple recipe for crepes and see how to holds up.
