Homemade Tomato Soup
I’m about to have my wisdom teeth removed and am thinking about what kinds of soup I can have while on a liquid diet as I heal. I’ve made this tomato soup recipe successfully before. It takes no time to make and tastes great.

Ingredients
- 2 cans whole peeled tomatoes
- 1 onion
- 4 cloves garlic
- 3 cups vegetable broth
- 2 tbl tomato paste
- 4 fresh basil leaves
- 1 tbl sugar
- 2 tsp salt
- 1/4 cup olive oil
Directions
- Add oil to a large saucepan and heat until shimmering
- Add garlic and onions and cook til transparent
- Add tomato paste and cook until it darkens
- Add vegetable broth and stir, scraping any hard bits from the bottom of the saucepan
- Add tomatoes, salt, sugar, and basil leaves and bring to a boil
- Reduce heat and simmer for 25 minutes
- Take off heat and let cool
- Using an immersion blender or countertop blender, blend until smooth
- Bring to a boil while stirring and serve
