Quick Curry

I adapted this recipe from Gordon Ramsay‘s nifty homemade “Curry in a Hurry” and naan recipe. Enjoy!

1 Butternut squash, peeled and grated
1 Onion, grated
1 piece, Ginger, grated
1 Chile, sliced
Frozen Peas
1 handful, Spinach leaves
.75 cup Coconut milk
.75 cup crushed tomatoes
2.5 tsp curry powder
0.5 cup vegetable stock
Salt to taste

Prepare naan dough
120 gms flour (~.75 cup flour?)
¼ cup water
Stir and fold into a small dough ball
Rest for 15 minutes

Start the curry
On a pre-heated, oiled pan, add squash, salt, curry powder
Heat for ~1-2 minutes
Add onion
Add ginger
Heat ~4 minutes
Add peas
Heat ~1 minute
Add tomatoes
Add coconut milk
Add ¼ cup stock
Cook 7-9 minutes

Make the naan
Cut into quarters, roll flat
In a flat, pre-heated pan, sprinkle salt and fry the dough. Flip to cook both sides

Finish the curry
Add spinach
Cook 4-5 minutes
Add coriander
Simmer and serve

It’s delicious and really easy to make!
