Green Beans with Lemon and Mint

I developed this simple recipe to make green beans with lemon and mint after my doctor recommended that I work green beans into my diet since they were a decent, overlooked source of fiber. This green beans with lemon and mint recipe requires one pot, a strainer, and ten minutes from start to finish.

Ingredients

  • 1 lb (.5 kg) green beans
  • 1 lemon juice, strained
  • 3 cloves garlic, minced
  • 1 tbl olive oil
  • 2 tbl fresh mint, chopped
  • Salt, pepper

Preparation

  1. Wash the green beans and trim the ends.
  2. In a sauce pan, steam or boil the green beans for 5 minutes.
  3. While the beans cook, squeeze the lemons, mince the garlic, and chop the mint.
  4. With a spoon or whisk, mix the lemon and mint.
  5. Empty the sauce pan into a strainer and briefly run the green beans under cold water to stop the cooking.
  6. In the same sauce pan, add the olive oil and heat, ensuring that the bottom of the pan is coated.
  7. Add minced garlic and cook for 30 seconds, until fragrant.
  8. Add green beans and sauté for 5 minutes, stirring frequently.
  9. Turn off heat, add lemon juice and mint and stir with a spoon to coat.
  10. Salt and pepper to taste.
