Green Beans with Lemon and Mint
I developed this simple recipe to make green beans with lemon and mint after my doctor recommended that I work green beans into my diet since they were a decent, overlooked source of fiber. This green beans with lemon and mint recipe requires one pot, a strainer, and ten minutes from start to finish.

Ingredients
- 1 lb (.5 kg) green beans
- 1 lemon juice, strained
- 3 cloves garlic, minced
- 1 tbl olive oil
- 2 tbl fresh mint, chopped
- Salt, pepper
Preparation
- Wash the green beans and trim the ends.
- In a sauce pan, steam or boil the green beans for 5 minutes.
- While the beans cook, squeeze the lemons, mince the garlic, and chop the mint.
- With a spoon or whisk, mix the lemon and mint.
- Empty the sauce pan into a strainer and briefly run the green beans under cold water to stop the cooking.
- In the same sauce pan, add the olive oil and heat, ensuring that the bottom of the pan is coated.
- Add minced garlic and cook for 30 seconds, until fragrant.
- Add green beans and sauté for 5 minutes, stirring frequently.
- Turn off heat, add lemon juice and mint and stir with a spoon to coat.
- Salt and pepper to taste.
