Easy Vegan Fruit Bar Recipe

This easy recipe for vegan fruit bars has few ingredients and needs only one pan. I used blueberries for the fruit filling, but you can use pretty much any fruit you want.

Ingredients

  • 1.25 cups rolls oats
  • 1.25 cups oat flour
  • .25 cups peanut butter (or any nut butter)
  • 1 tbl coconut oil
  • .25 cups maple syrup
  • 1 cup blueberries
  • 1 tbl water

Instructions

  1. Heat a frying or other wide pan and add the fruit as a single layer and water
  2. After boiling, lower heat to medium and cook for 5 minutes, stirring occasionally and lightly mashing fruit as it softens.
  3. In a bowl, combine oats, flour, peanut butter, coconut oil, maple syrup, stirring with a spoon initially and then with clean hands until fully combined in a rough batter.
  4. Lightly grease a loaf pan with a little coconut oil.
  5. Using .75 of the batter, press as a flat layer on the bottom of the loaf pan.
  6. Using a spoon, transfer the cooked fruit onto the batter in a smooth, flat layer.
  7. Lightly press the remaining batter on top of the fruit.
  8. Refrigerate until set, at least 1 hour.
  9. Cut into squares, roughly 12 servings.

That’s all there is to these easy vegan fruit bars. Although the loaf needs to set in a refrigerator for at least one hour, total prep and assembly only take about 10 minutes.
